Combining with food
This wine can be enjoyed in combination with fresh salads, soft cheeses and nuts, seafood – mussels and shrimps, as well as white fish and roasted chicken fillet. Any pasta with cheese/butter based sauces would always complement the freshness of Chardonnay.

Technology
Harvest 2024 began, as per tradition, with Chardonnay – but two weeks earlier than usual. The grapes were picked at 23.9% sugar content, then chilled in a cooling chamber at 6-8°C. The must was drained after 24 hours of maceration at 6°C. After 15 days of alcoholic fermentation at 15-16°C, the wine was aged for two months on fine lees.
