ROSALEA Birds of Sakar Rose 2025

The wine is part of the Birds of Sakar series, a joint project of Wines of Sakar and the Bulgarian bird protection company BirdLife Bulgaria. This is a guilty line that unites all 9 wineries, part of the association and BDZP in the general cause of supporting the conservation of wild birds in Sakar.

The series includes one wine from each room, and the labels bear the vision and names of some of the most emblematic bird species in the region, demonstrating the connection between wine production and preserved nature.

The bird that adorns the label of Rosalea Rose Blend 2023 is a red-headed skunk.

The implementation of the wine line “Birds of Sakar” is supported by the “Green Belt of South-Eastern Bulgaria” project, funded by the Endangered Landscape Program (ELP), which is managed by the Cambridge Nature Initiative – a collaboration between the University of Cambridge and leading international organizations focused on biodiversity conservation. The University and the Program for Endangered Landscapes are supported by Arcadia (Arcadia) – the charity fund of Peter Baldwin and Lizbeth Rausing.

Combining with food

This fresh rosé is suitable for pairing with summer salads with pink tomatoes and fresh
cheese, seafood or pasta with fresh vegetables. It also pairs well with light cheeses,
garnished with fruit jams or fresh fruit. It’s also an excellent companion for desserts
such as fruit tart, strawberry cheesecake and iced desserts.

Harvest

During the 2025 harvest, weather conditions were both good and bad. After the
exceptionally generous rainfall in the autumn and winter, we had very good moisture
reserves. Spring rains would also have a positive impact on the development of the vines.
But after 20 l/sq. m. of rain on April 6 and 7, there was a prolonged period of sub-zero
temperatures in the night between April 7th and 8th, as well as ice formation. There
were a few more frosty evenings and then one at the end of April. On May 7th, we were
hit by hail, which destroyed some of the shoots. Typically for the region, the summer
was hot, but in August we enjoyed abundant and refreshing rain. We had enough
moisture and sun for a good harvest, but due to the impact of poor conditions, our
current harvest has an extremely low yield, made up mainly of replacement buds.

The vines

On the gentle hills of the Sakar Mountain, not far from the town of Harmanli, at an altitude of 130m and on luvisols and phaeozem soils, we grow our Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud, Rubin, Dimyat and Red Misket.

Technology

All four grape sorts for this wine were harvested at different times. The grape is pre-chilled
for a minimum of 24 hours. The processing and pressing were selected taking into account
the characteristics of each grape sort. We are protecting the fruits and the must from
oxidisation by using dry ice during all applicable processes. After clarification the juice
ferments at a temperature of about 14°С.
The result after the end of the alcoholic
fermentation is a coupage wine. The wine is bottled in June, 2026.
